Fried Chicken

Ingredients (Serves 4)
1 whole chicken
1 tablespoon tomato paste
3 tablespoons clarified butter
1 lemon juice
1 teaspoon salt
½ teaspoon black pepper
3-4 glasses of water
Preparation
Chicken is cut into pieces, washed in plenty of water and placed in a strainer. Oil is placed in a large pot. When the oil is hot, add the chicken and fry until it turns pink on all sides. Tomato paste is added to the fried chicken. When the tomato paste is roasted, three to four glasses of water, salt, and pepper are added and left to cook. When it is almost cooked, lemon juice is added and brought to a boil, then removed from the heat and placed on a serving plate, served with white rice.
