Paliza

Ingredients (Serves 4)
2 tablespoons of wheat starch
1 liter of water
1 cup of granulated sugar
Preparation
Water and starch are poured into a pot and mixed over the fire. After it is boiled and cooked well, it is poured into a tray, and when it cools down, it is chopped into small cubes. Two glasses of water are poured over one glass of sugar and mixed well. After it melts, it is poured over the palıza. Sugar coloring can be added or fruit juice can be added and it is usually eaten iced/cold.
*Paluze, known as water pudding, means in Persian, paste, strained. It used to be sold on the streets. In Birecik, it is called cicili bicili, and in Adana, it is sold on the streets as bıcı bıcı.
