Preparation
After the tomatoes are washed and placed in basins and crushed to extract their water, the pulp is squeezed thoroughly. The pulp is squeezed again with a little water and salt, then the water is removed and discarded. The strained juices are put through a strainer and placed on trays, mixed frequently and solidified in the sun, and when it reaches the consistency of tomato paste, it is put into jars.
