Tray Kebab

Ingredients (For 5 People)
2 kg eggplant (thin and long) 
1 kg medium-fat ground meat
1 cup oil
1 teaspoon salt
1 teaspoon black pepper

Preparation
When we say tray kebab, we mean this dish made with eggplant. Salt and black pepper are added to the ground meat and kneaded. The washed and cut eggplants are cut into rings of four to five cm thickness; the meat is shaped like kebab meat by hand and arranged on the tray as one meat/one eggplant. When the tray is completely full, add a cup of oil and salt and cook for about 1 hour at 200 degrees or send it to the oven. On a separate tray, cut the tomatoes in half and arrange them upside down. Add two tablespoons of oil and arrange six or seven red or green peppers on the sides and cook or send it to the oven. The trays coming out of the oven are taken to the table, wrapped in open (lavash) bread and eaten with onion, green pepper and ayran.
